What Do Lotus Biscoff Cookies Taste Like?

These unique cookies, often found as a snack on airplanes and more, have a deep caramel crisp flavor with warm spices and a not-too-sweet taste. They are also referred to as Speculoos cookies in Belgium and Speculaas in Holland.

But the name is derived from combining Biscuits and Coffee. Fitting, right?

There are many names for this scrumptious elixir like Biscoff Latte, Caramel Biscoff Latte, Lotus Latte, and just about any other way you can string those words together. But no matter how you say it-- this strong and creamy coffee recipe is full of buttery cookie goodness and a rich caramel flavor that is out of this world!

What is a Biscoff Latte?

A Biscoff Cookie Butter Latte is a coffee drink made with cookie butter spread, brown sugar, vanilla, espresso or strong coffee, steamed or hot milk, and foam. It's really easy to make and divine to drink.

Ingredient Notes

  • Extra Strong Coffee or Espresso Coffee: It is best to use freshly brewed hot coffee. If you have an espresso machine or strong coffee setting, use that. If you need to mimic espresso, a dark or french roast works nicely; just double the coffee amount.
  • Biscoff Cookie Spread: This is the cookie butter component. Trader Joe's cookie butter is also delicious. Cookie Butter adds a deep caramel flavor to the rich coffee. (Heavenly Combination)
  • Milk: I use full fat or whole milk for a nice creamy latte; you can use 2% or non-dairy milk such as oat milk or almond milk as well.
  • Sugar: Adding just a touch of brown sugar gives a little extra sweetness add enhances those caramel notes. Cookie butter has a mild sweetness to it, so you could omit this if desired.
  • Vanilla Extract: Extract adds another delicious layer of flavor.
  • Whipped Cream: Use to garnish making this a decadent latte!
  • Biscoff Cookies: For the topping, it makes such a beautiful finishing garnish!

Variations and Substitutions

Lotus Biscoff Cookies and Cookie butter have a unique flavor that makes up this Latte Recipe, but here are some other flavors or add-ins you can try:

  • Substitute with peanut butter or almond butter for a nutty flavor.
  • Try drizzling with caramel or chocolate as a garnish.
  • During the holidays, you can find flavored whipped creams or even add nutmeg or cinnamon to a homemade whipped cream.
  • Warm Spices: During the Fall, you could sprinkle with Pumpkin Spice or Apple Spice.

How To Make a Lotus Cookie Butter Latte

Step 1 | Make Cookie Butter Coffee

Start by brewing the espresso or strong coffee, and make sure it is piping hot.

Add in the rich Biscoff cookie butter and blend with a whisk until combined.

Then add in the brown sugar and vanilla extract and whisk together.

Step 2 | Warm Milk and Make Froth Foam

While you are making the Biscoff coffee, pop the milk in a mason jar and microwave for 1 minute to warm. You want this to be hot but not burning or boiling.

You could also warm it on the stovetop if desired while you are making your coffee. I just am keeping it simple here.

Then simply shake the mason jar until the milk is nice and frothy. You can also use a handheld milk frother or stand-alone machine. Then, if your coffee maker has a frother take advantage of those tools.

Then using the lid or spoon to reserve the extra frothy part, start adding the warm milk into the coffee. Once you reach the extra frothy portion add to the top, or you can spoon the foam on.

Step 3 | Garnish and Enjoy

Crush a Lotus Biscoff Cookie with a fork. You can also find another brand of cookie butter cookies or Speculoos Cookies at Trader Joe's or some other retail stores.

To make the dreamy topping, add canned or homemade whipped cream to the top and sprinkle on crushed cookies. YUM!

Drizzle melted cookie butter (melt in the microwave for 15-second intervals until desired consistency is reached) over the top and garnish with a Biscoff cookie placed just so.

Tips

  • Cookie Butter Not Melting? Be sure your coffee is hot so that the cookie butter will melt quickly. Also, make sure the cookie butter is at room temperature.
  • Using a whisk will break up the cookie butter quickly.
  • When using a mason jar to create the froth, you may want to open the lid after the first 15-20 seconds to allow some of the excess heat to escape.

Recipe FAQ's

Is this actually a latte?

Not exactly. A true latte uses steamed milk and espresso. We created the steamed milk effect with the mason jar and mimicked espresso by brewing our coffee extra strong. You can absolutely traditionally steam your milk and use true espresso if you have the means to do so.

Do I have to use the Biscoff brand?

No, any brand of cookie butter will suffice, as they are all similar and made with the same ingredients.

Is it necessary to use the mason jar to shake the milk?

This was used here to create the foam you get in a true latte. It is not necessary and does not really affect the flavor or the latte itself. You can just heat your milk and add it if you do not care about enjoying the foam on top! Likewise, you can use a handheld frothing wand, or if your coffee machine has a frother, use that.

Does it matter what kind of coffee is used?

I use a dark roast to help mimic the espresso richness and flavor, but any ground non-flavored coffee should be ok!

When you say brew your coffee extra strong, what does that mean?

Typically coffee is brewed with about 1 tablespoon per 6 oz of water. To brew the coffee extra strong, consider doubling this recommendation by using 2 tablespoons per 6 oz of water.

Ingredients

  • ¾ cup milk
  • ½ cup extra strong brewed coffee or espresso, hot
  • 1 tablespoon Biscoff cookie butter, room temperature
  • 1 teaspoon brown sugar
  • 1 teaspoon vanilla extract

Toppings

  • whipped cream
  • Biscoff cookies for serving

Instructions

  • Brew very strong coffee or espresso.

  • Heat the milk in the microwave for 1 minute. You want the milk to feel fairly hot to the touch but not so hot it would burn your finger.

  • While milk it heating, add the cookie butter to your hot coffee and mix until it is dissolved (You can use a small whisk, a fork, or a handheld frothing wand).

  • Then add the brown sugar and vanilla extract and stir again, mixing until dissolved.

  • Add the hot milk to a mason jar and close the lid. Shake the jar for 1-2 minutes until you see foam begin to form. It is recommended to open the lid after the first 15-20 seconds to allow some of the excess heat to escape.

    If you have a handheld frothing wand or your coffee machine has a frothing machine you can also use that to froth until it forms a foam. (Some machines have the ability to hot froth so you can skip heating the milk if yours does this.)

  • Pour the frothed milk into the coffee mixture using a spoon or mason jar lid to stop the foam.

To Garnish

  • Add whipped cream, melted cookie butter, and garnish with Biscoff cookies.

  • Biscoff garnish could include crumbled on top of the whipped cream, dipped whole into the whipped cream, or placed around the top edge of the glass with extra melted cookie butter. A caramel drizzle is also nice.
